A twist on the classic caprese salad. Ripe watermelon and blueberries complement the sweet acidity of the balsamic and the creaminess of the mozzarella really well. Perfect with grilled protein of your choice.
2 handfuls of basil leaves roughly chopped
2 ripe tomatoes chopped
1/4 small watermelon cubed
1 tub mini mozzarella balls drained
1.2 punnet blueberries
reduced balsamic vinegar to finish
Add all ingredients to a bowl
Just before serving drizzle with balsamic vinegar
Serve with grilled protein of your choice
