The best thing about summer is lounging outside, relaxing with friends and family and salads! There is nothing worse than slaving over a hot stove in summer so salads and grilling are the way to go. This watermelon, blueberry caprese salad is stunning and pairs really well with all kinds of grilled protein.
I have been lucky enough this season to have a bumper crop of basil so I decided caprese salad it must be. I wanted to add a twist to the salad and had some watermelon left over from my Son’s 1st birthday and I thought it would go really well with the basil and balsamic glaze.
My watermelon, blueberry caprese salad is really easy to throw together. Roughly chop the basil, cube the watermelon and cut up some ripe tomatoes and add to a bowl. Add some blueberries and mini mozzarella balls and finally drizzle with a store bought balsamic glaze. Serve with a grilled protein of your choice. Yum!

Ingredients
2 handfuls of basil leaves roughly chopped
2 ripe tomatoes chopped
1/4 small watermelon cubed
1 tub mini mozzarella balls drained
1.2 punnet blueberries
reduced balsamic vinegar to finish
Instructions
Add all ingredients to a bowl
Just before serving drizzle with balsamic vinegar
Serve with grilled protein of your choice
