I think my favourite drink must be a classic gin and tonic but I’m always game for new flavours. I was busy whipping up a batch of the best blueberry compote when I thought of adding some of it to a gin and tonic. My blueberry gin and tonic was born. It is amazingly refreshing and the blueberries give it a vibrant colour and taste.
Super simple recipe. In your favourite glass add the blueberry compote along with some ice and a mint sprig. Add the gin (I prefer a London dry gin) but your favourite gin will work fine and my go to for this drink is a diet tonic like this one purely because the blueberry compote is quite sweet and I don’t want to add to the sugar content of the drink. Finish off with a small squeeze of lime and you are done.

Ingredients
for a single, 25ml london dry gin (double is 50ml)
1 large cube of ice
10ml blueberry compote
mint sprigs
1/4 lime
Instructions
In a glass add the compote, ice, mint and gin
pour over the tonic and squeeze the lime into the glass
stir well and garnish with mint and a slice of lime
enjoy!
