Super simple blueberry compote recipe that pairs perfectly with pancakes, over yogurt or on ice cream. Easy and delicious!
1 lb (450g) fresh blueberries
45 – 50g granulated sugar
Zest of 1 lemon
30ml lemon juice
pinch of salt
Add all the ingredients into a saucepan or pot over medium heat
Bring mixture to a boil and lower the heat Stir occasionally for about 10 minutes
For a thinner consistency boil for less time. The mixture will thicken when it cools
Transfer to a container
The blueberry compote will last for about 2 weeks in the fridge.
