Here’s a quick and easy compote recipe for the best blueberry compote. It goes great with pancakes or on freshly buttered toast. It also goes great over plain Greek yogurt or ice cream! At the moment the blueberries we get are particularly plump and juicy and very sweet so I thought what better time to make a batch of blueberry compote.
The recipe is really simple. Just add all the ingredients into a small saucepan or pot and bring to the boil stirring occasionally for 10 to 15 minutes to get a semi thick compote. Super simple and super delicious! If you prefer a pourable compote just reduce the cooking time. Remember the compote thickens as it cools.

Ingredients
1 lb (450g) fresh blueberries
45 – 50g granulated sugar
Zest of 1 lemon
30ml lemon juice
pinch of salt
Instructions
Add all the ingredients into a saucepan or pot over medium heat
Bring mixture to a boil and lower the heat Stir occasionally for about 10 minutes
For a thinner consistency boil for less time. The mixture will thicken when it cools
Transfer to a container
The blueberry compote will last for about 2 weeks in the fridge.
