I’m a solid believer that if you are going to master baking anything that it be a simple banana bread recipe. Not because of the ease of creating this masterpiece but because it is just so delicious!
I have put together this extremely easy recipe that is also very simple to adapt. You can add nuts or chocolate chips without having to adjust anything else and your banana bread will come out perfect every time.
I have a confession to make. I don’t like a fresh banana and make a point of steering clear from them. My Wife loves them so we do always have them in the house and more often than not we will have a few left over at the end of the week that are no longer ideal candidates for snacking on. In these circumstances the best alternative is to make a quick banana bread you can then snack on over the weekend with a cup of coffee or tea if you are that way inclined!
The Bananas Must Be Extremely Ripe
When you have a few bananas that are past their snacking stage leave them out for a day or two longer until they are extremely ripe. I’m talking skin starting to blacken ripe and when opened they have a real pungent banana smell. That is the perfect time to make the best banana bread recipe.
Let’s Talk about Extras
Do you like walnuts or pecans? Perhaps you are a fan of dark chocolate chips or even…heaven forbid…white chocolate chips! No Problem!
Throw a half cup of your favourite “extra” into the batter and you will still have an amazing banana bread you can share. No need to alter the rest of the recipe at all.
But I’m worried my banana bread won’t come out of the loaf tin!
Never fear. As long as you butter the tin extremely well and create a parchent paper layer your loaf will come out every time! I go even further and make handles with the parchment paper for even easier extraction.

Ingredients
2 cups all-purpose flour
2 tsp baking powder
1/8 tsp bicarbonate of soda
1/4 tsp salt
1 tsp ground cinnamon
1/2 cup butter
3/4 cup white or brown sugar
2 eggs
4 large, ripe bananas, mashed
1/2 cup chopped nuts of your choice or chocolate chips (optional)
1/2 tsp vanilla extract
Instructions
Cream butter and sugar until light. Add eggs, one at a time, beating well between additions.
Sift flour with baking powder, bicarbonate of soda, salt and cinnamon.
Add flour mixture to creamed mixture alternatively with bananas, beating well until smooth. Stir in extras (optional) and vanilla extract.
Pour into a lined and buttered 8 inch loaf tin. Smooth top and bake at 180°C (350°F) in centre of oven for 50 minutes to 1 hour. Turn out, remove paper and cool.
Serve sliced and buttered.
