Not a huge fan of burritos? Find them too filling? Then this shrimp burrito bowl is exactly what you are looking for. I have a confession though, I didn’t really know what a burrito was until I was much older because they just weren’t that popular in South Africa where I grew up. Only when I started travelling to the USA did I really get a taste for Mexican food and I absolutely fell in love with tacos and burritos. The problem for me, I found them so filling and the portion sizes were absolutely massive.
When I stumbled across burrito bowls I was an instant convert. For me they eat more like a salad than a traditional burrito and they are a much lighter meal. I made this shrimp burrito bowl by frying some green bell pepper and onion and adding a bit of cumin and ground coriander and then adding cleaned shrimp and frying for 5 minutes. Yum!
I accompanied the shrimp with my homemade salsa and guacamole and cilantro lime rice (recipe below). Other accompaniments are fresh corn off the cob and of course re fried black beans. I didn’t have any sour cream or cheese on hand but feel free to add that to the bowl as well.
Cilantro Lime Rice
This Cilantro lime rice recipe is pretty dang easy to make and requires very few ingredients. I used basmati rice for mine and added a good tablespoon of butter for richness and a whole boatload of lime zest for that intense lime aroma and flavour. Once cooked I topped off the rice with the cilantro (both the leaves and stems chopped up). A good squeeze of lime juice and you are done!
Below is the recipe for the shrimp and rice. Feel free to add other topping to your bowl and don’t forget to have a look at my homemade salsa and guacamole recipe
