Summer is quickly coming to an end here in sunny Spain and we are trying to squeeze as many cool dishes and salads into our evening meals as possible.
I made this pork belly and grilled peach salad after having some crispy beer braised pork left over and thought it would pair really well with some salad greens and fresh grilled peaches. The salad really did come out well and tasted absolutely delicious.
Fact of the day: Peaches are a great source of vitamins A and C.
I used a yellow peach for my salad but you could use any peach you wanted. Apricots and nectarines would also work really well here, even a nice firm pear would work for grilling and the sweetness would work perfectly with the pork.
As for the greens. I used arugula as I think the pepperiness just works with the other ingredients but I think romaine lettuce or a bag of mixed greens would work just as well.
A simple dressing is needed for all these flavours and I just used simple balsamic and olive oil as a dressing.

Ingredients
200g leftover pork belly cut into pieces
1 peach, seed removed and cut into 8 pieces
1 bag arugula
balsamic and olive oil for dressing
Salt and Pepper to taste
Instructions
Heat the leftover pork belly in a heavy based pan
One warm remove and place the peach pieces in the same pan to cook
Char the peaches on all sides (this give the salad an amazing flavour)
Remove from the heat and set aside
In a plate place the arugula down and scatter the pork and peaches over it
Salt and pepper to taste and sprinkle with balsamic and olive oil
Serve and enjoy!
