Some nights I have a really tough time thinking of a dish to make and I turn to the weird and wonderful. Sometimes my family love it…sometimes not so much! This little gem is definitely a keeper and was absolutely mouth wateringly delicious!
This recipe comes together really quickly. The most time consuming bit is the lentils but they can be made ahead and warmed up when needed. I would suggest using them within an hour though otherwise they do become a little starchy and grainy. I used a type of lentil called Pardina that is a small brown variety from Spain. If you can’t get this type of lentil you will be wanting to get a small lentil variety that has a long cooking time otherwise your braised lentils will turn to mush.
Yoghurt and lentils…that sounds disgusting I hear you say? My dear friends please try this recipe and you will be converted. The rich savouriness of the lentils and the creaminess of the egg yolk and yoghurt really complement each other so well. Have this for breakfast, lunch or supper…you won’t be disappointed!

Ingredients
Lentils
1 small red onion diced
2 garlic cloves minced
1 tsp smoke paprika
1/2 tsp oregano
1/2 tsp cumin
1/2 tsp ground coriander
1/2 cup red wine
2 cups vegetable stock
1/2 cup small long cook lentils
1 cup kale or collard greens chopped
Yoghurt
1 cup yoghurt
2 Tbsp mint chopped
1/4 tsp ground black pepper
Half a lemon juiced
salt to taste
Instructions
Lentils
Fry onion and garlic in medium sized pot until translucent
Add the spices and lentils and stir to combine
Add red wine and cook until red wine is completely incorporated
Add stock and simmer uncovered for 40 minutes or until liquid is completely absorbed
If necessary add salt to taste but the stock would most likely provide all the salt needed.
Finish off with a drizzle of olive oil to loosen the mixture slightly
Yoghurt
Combine all the ingredients together and refrigerate for at least an hour for the flavours to combine.
Bring It All Together
Place a healthy serving of yoghurt down on the plate
Spoon the lentil mixture over the yoghurt
Top with a perfectly poached or fried egg
Dig in and enjoy!
