It’s still salads at home and I wouldn’t have it any other way with this heat we are currently experiencing. The more I can stay away from a hot stove and oven the better. This easy tropical shrimp salad comes together really quickly and is simply delicious as a salad or dip for corn chips!
The best thing about this recipe is that there is no cooking required. Buy your shrimp cooked from your fish monger and the salad comes together so quickly! The rest is simply chopping all the ingredients and mixing it all in a bowl giving you more time for Sangria or Mojitos.
You can use any fruit in this salad but I went really simple. Mango, Papaya and Pineapple worked really well and gave the salad that extra acidity it needed along with the lime juice. Avocado mellowed out the flavour and gave it a wonderful buttery flavour it needed. For a crunchy element I used raw red onion and red bell pepper and it rounded out the salad perfectly.

Ingredients
300g deveined, deshelled cooked shrimp (I buy mine from my fishmonger already prepared)
2 fresh pineapple rings cubed
1/4 small papaya peeled and cubed
1 mango peeled and cubed
1 avocado scooped and cubed
1/2 red onion finely diced
1/2 red bell pepper finely diced
2 limes juiced
4 tbsp extra virgin olive oil
1 small handful cilantro leaved chopped
salt and pepper to taste
Instructions
Cut your shrimp into manageable pieces (something you can eat without having to use a knife)
Add all ingredients to a bowl including your lime juice, oil, cilantro and salt and pepper
Stir to combine and then the most important step
Wait…
Let the salad sit in the fridge covered for at least 4 hours for all the flavours to mingle
Just before serving adjust seasoning and enjoy!
