I absolutely love artichokes! In salads, as a pizza topping or just plain with some aioli or homemade mayonnaise. We have been having a salad week at home as it has been excruciatingly hot and I decided I would try my hand at marinating some bottled artichokes to give them a bit of a kick.
My Spanish marinated artichokes are really simple to make and will keep in the fridge for a week in a sealed container. I use bottled whole artichoke hearts in water that I cut in half but canned would work just as well. The kick comes from red pepper flakes and lime juice which gives it an amazing summery tropical flavour.
What can you enjoy these Spanish marinated artichokes with? I would add them to salads, chop them up and stir them into hot spaghetti with olive oil or enjoy them on their own on a platter with cheeses, olives and cold meats!

Ingredients
1 bottle artichoke hearts in water (500ml)
zest of 1 lime
2 limes juiced
1 large clove of garlic minced
1/4 tsp oregano
1/2 tsp red pepper flakes
1/4 cup olive oil
1/2 tsp freshly ground black pepper
salt to taste
Instructions
Drain artichoke hearts and cut each artichoke heart in half and add to a bowl
Add remaining ingredients and stir well to combine
Transfer to a airtight container and refrigerate for at least 4 hours, overnight is best
Enjoy on their own, in pasta or on salads!
