Cheddar Beer Soup

Ingredients

Instructions

  1. Heat oil and butter in a large pot
  2. When oil is hot add the diced veggies excluding the potatoes
  3. Once the veggies are soft add the garlic and saute for 30 seconds
  4. Add the flour and stir to combine
  5. Add the diced potato and all the liquids (milk, beer and stock)
  6. simmer on medium until potatoes start breaking apart and soup has thickened (generally 30 minutes)
  7. Season to taste
  8. Once soup is to your liking, turn off the heat and add the cheddar cheese.
  9. Stir to combine and serve immediately
