Just when you think winter is finally over and you can dust off you favorite flip flops and shorts, BAM! another cold spell hits you and all you can think about is a warm comforting soup to devour whilst cosying up under a massive blanket on the couch. Did that sound enticing? Did I make you want to run to the kitchen and whip up a delicious soup? Well then this cheddar beer soup recipe is perfect for you!
The cheddar beer soup base is pretty simple and I throw in as many veggies as I can so I can hide them from the kids. I don’t add cream and use skim milk to keep the richness down and lets be honest, with all the cheese that goes into this soup you really don’t need more fat.

Cheddar Beer Soup

Ingredients
- 1 medium onion diced
- 2 stick celery diced
- 1 red bell pepper diced
- 2 medium potatoes cubed
- 2 cloves of garlic
- 1 tbsp butter
- 2 tbsp olive oil
- 2 cups skim milk
- 1 can lager or pilsner
- 2 cups chicken stock
- 2 tbsp flour
- salt and pepper to taste
- 1/2 tsp cayenne pepper
- 2 cups shredded mature cheddar cheese plus extra for topping
Instructions
- Heat oil and butter in a large pot
- When oil is hot add the diced veggies excluding the potatoes
- Once the veggies are soft add the garlic and saute for 30 seconds
- Add the flour and stir to combine
- Add the diced potato and all the liquids (milk, beer and stock)
- simmer on medium until potatoes start breaking apart and soup has thickened (generally 30 minutes)
- Season to taste
- Once soup is to your liking, turn off the heat and add the cheddar cheese.
- Stir to combine and serve immediately
